Navratri Sabudana Vada Recipe: Navratri is a time when people worship the nine forms of Goddess Durga, and some also observe a fast for nine days. During these nine days, satvik food is cooked in homes. In many homes, onion and garlic are not consumed during these nine days. If you too are going to fast this Navratri, you will definitely want to enjoy delicious fast-friendly dishes. A particularly popular snack during this festival, often made in every household, is sabudana vada. This crispy and spicy snack made with sabudana and peanuts is loved by everyone. Chef Sanjeev Kapoor has shared a special recipe for sabudana vada that makes it even more special – a snack that is a must-try during the nine-day fast. Method of making Sabudana Vada (Sabudana Vada Recipe)

Material


For the chutney


½ cup fresh coconut (grated)

½ cup fresh coriander leaves

1 green chilli

½ tsp cumin seeds

2 tablespoons roasted peanuts

Salt to taste

For the sweet yogurt


½ cup chilled yogurt

1½ tablespoons powdered sugar

a pinch of salt

For the Vada


1 1/2 cups sago (soaked)

3 medium sized potatoes (boiled, peeled and mashed)

2 tsp ginger-green chilli paste

Salt to taste

1 tsp cumin seeds

3/4 cup roasted and coarsely ground peanuts

Juice of 1/2 lemon

Oil – for greasing hands and frying


Sabudana Recipe


To make the chutney, first combine coconut, coriander leaves, green chilies, cumin seeds, roasted peanuts, salt, and 1/4 cup water in a mixer jar and grind them into a fine paste. To prepare the sweet yogurt, place the yogurt in a bowl, add the powdered sugar, and a pinch of salt, and mix well. 


To prepare the vada mixture, place soaked tapioca pearls in a large plate. Add mashed potatoes, ginger-green chili paste, salt, cumin seeds, coarsely ground peanuts, and lemon juice. Mix everything thoroughly to form a smooth mixture. Now, apply a little oil to your hands and form the vadas from this mixture. Heat oil in a pan and fry the vadas over low heat until golden and crispy. Then, remove them on tissue paper to drain off excess oil. Serve them with coconut-coriander chutney and sweet yogurt.
