Material:
For water chestnut paratha:
Water chestnut flour - 1 cup
Boiled potatoes - 2 (mashed)
Rock salt - as per taste
Green chilli – 1 (finely chopped)
Green coriander - a little
Ghee - for frying
For the potato curry:
Boiled potatoes - 3
Tomatoes – 2 (finely chopped)
Green chilli – 1
Cumin seeds - 1 tsp
Rock salt - as per taste
Ghee – 1 tablespoon
Coriander powder - 1 tsp
Coriander leaves - for garnishing
Method of preparation:
Water chestnut parathas
Mix mashed potatoes, salt, chilli and coriander in water chestnut flour.
Add some water and knead soft dough.
If it is difficult to roll, make paratha by patting it with your hand.
Apply ghee on the pan and fry it till it turns golden on both sides.
Potato vegetable:
Heat ghee in a pan, add cumin seeds and green chillies.
Then add tomatoes and fry.
Add boiled potatoes, mix spices and salt.
Add some water and cook for 5 minutes.
Serve with green coriander on top.
