He also cites Raghunath's book 'Bhoj Kutuhal' which mentions the recipe of this dish. Those who emphasize its Indian origin call it 'Jal-Vallika'. It got this name because it was full of juice and then its form became Jalebi.

By what names is Jalebi known?

In India, it is known by different names in different states. In Bengal, it is known as 'Chanar', in Indore as Jalebi, in Madhya Pradesh as Mawa Jambi, in Hyderabad as Khoya Jalebi, and in Andhra Pradesh as Imarti or Jangiri.


Jalebi Instant Recipe

Material


For the batter:


Refined flour – 1 cup  

Cornflour – 2 tablespoons  

Curd – 2 tbsp  

Baking Soda – 1/4 tsp  

Water – as needed  

Yellow food color – a pinch (optional)

For the syrup:


Sugar – 1 cup  

Water – 1/2 cup  

Lemon juice – 1 tsp  

Cardamom powder – 1/4 tsp  

Saffron – a few strands (optional)

For frying:


ghee or oil


Recipe:


First, prepare the batter. Mix together flour, cornflour, yogurt, and baking soda. Then, add water little by little to form the batter. Ensure the batter is thick but still runny. Let it rest for 10-15 minutes.   

Combine sugar and water in a pan. Cook over medium heat for 5–7 minutes. Add lemon juice, cardamom, and saffron. Prepare a one-string syrup and set aside.  


Now heat ghee in a pan, pour the jalebi batter into a cloth cone or a bottle, and shape them into round jalebis in the hot oil, frying them until golden brown on both sides. Immediately dip the hot jalebis in sugar syrup for 1-2 minutes and then remove them. Your jalebis are ready. Serve with yogurt or rabri.
